i grew up eating special k bars...they have always been one of my favorite desserts. while they may resemble a rice krispy treat, they taste completely different, thanks to some added peanut butter and an amazing layer of chocolate and butterscotch frosting on top. my dad has been known to eat an entire pan of these in one afternoon! special k bars are one of my go to recipes when i’m taking a treat somewhere last minute...it’s super easy and the ingredients are almost always in our house!
1/2 cup sugar
1/2 cup karo syrup
1 cup peanut butter
6 cups rice krispies
1 bag chocolate chips
1 bag butterscotch chips
mix sugar and karo syrup in a saucepan, bring to a boil. remove from heat and stir in peanut butter. pour over rice krispies and mix well. press firmly into a 9x13 pan (don’t pack it in too tight or they’re hard to cute). melt chocolate and butterscotch chips in microwave. stir until smooth and spread over bars. don’t cut or serve until frosting has set.
and, a big thanks to my sweetest sister-in-law breanna, who brought us over the most amazing all homemade meal last night. i've been majorly resting my back and shoulder, and if not for her, we would have been eating some form of freezer/fast food. the girls fought over her humus and they ended up eating it with their forks...and i would have never guessed they'd inhale any sort or curry! thank you so so so much! matthew instagrammed this picture of it...
